Chocolate Cherry Chip Cookies

I’m big into freezer meal planning, and I spend weekends portioning out meats, sauces, and vegetables to create simple dinners for those busy nights. Yet, I don’t JUST plan ahead when it comes to meals. The holidays often involve many parties and school events where dozens of cookies are needed! One way to save time in the kitchen (and yet still bake amazing cookies!) is to freeze cookie dough. Have you ever tried freezing cookie dough to bake at a later time? Imagine warm cookies, just in time for a holiday party, without all the mixing and measuring the night before!

One way that I surprise friends and family is with edible gifts. From pies to cupcakes, I always find a way to give frugally with flair! I have always been of the opinion that edible wedding favors, housewarming party treats, and holiday sweets are much more appreciated than something that adds more clutter to their home! Since I prefer to gift food items, it’s SO much easier to make cookie dough AHEAD of time.

Reynolds Genuine Parchment Paper and Cookie Baking Sheets (pre-cut parchment sheets) are tested to safely withstand oven temperatures up to 420°F, and you can pick up the entire baking sheet and slide it onto a cooling rack to cool off when they’re done. So, just HOW do you make cookie dough ahead of time? It’s quite simple! Just make your favorite cookie recipe and divide it into two or three equal portions. You can roll the dough into logs and wrap each portion in a sheet of parchment paper. Just refrigerate until cold or you can place the wrapped dough in a freezer bag. The dough is good in the freezer for up to one month. Ready to bake? Just thaw, roll, cut, and BAKE!

One of my favorite family cookie recipes involves a simple shortcut: cake mix! While I do enjoy a good homemade cookie, sometimes cake mix can provide a delicious flavor that is unmatched. We enjoy traditional chocolate chip cookies, but we love to add a little extra flavor when we can.
Cherry Chocolate Chip Cookies

To create this delicious chocolate cookie with a bit of extra fruit flavor, I used a cherry cake mix along with specialty chocolate chips!

Chocolate Cherry Chip Cookies

Yield: 24 cookies
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Add cherries to your chocolate chip cookies!

Ingredients

  • 1 box of cherry cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tbsp flour
  • 1 package of Chocolate Morsels (cherry filled, preferably)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine the cherry chip cake mix, oil, 2 eggs and flour mixing well.
  3. Add in about 3/4 of the Cherry Filled Morsels.
  4. Use a tablespoon to scoop the cookie dough mixture and roll into about 2" balls.
  5. Place 2-3" a part on your baking sheet.
  6. Bake 8-10 minutes. Peek at them around 8 minutes if your oven runs hot - anything longer than 8 minutes in my oven and they would burn.
  7. Makes about 2 dozen cookies.

Cherry Chocolate Chip Cookies

You could use other fruit flavors too include the seasonal favorite cranberry or even orange or lime! Mint is usually my go-to holiday cookie, but it is nice to have a bit of variety too. These cookies are unique without being too strange, and the final product is certainly delicious!
